Defining Functions in ASM

Does anyone there know how to define your own functions in the asm programming. I want to be able to access it using "call ..." not "jp ..." If someone could get me this information, it'd be greatly appreciated. I'm trying to shrink down one of my programs for the 83. I should be able to cut it by half if I can get this to work.
