The books aren't programming guides, they're just manuals. They expect you
know how to program; they provide the Z80 specific information.

I, too, once (a long time ago) tried ordering a
book from Zilog -- they actually sent it to me,
and it really sucked! It just had a list of the
operators. I then (a while later) tried ordering
another of the Z80 books, but they didn't ever
send it to me. I guess they stopped sending books
:(
Oh well, there's much better books on Z80
assembly from 3rd party companies... try
"Programming the Z80" by Rodney Zaks -- it's quite
good... though I'm sure there's better!
